I do not can or freeze anything else, but applesauce is the one thing I find rewarding and oh so tasty. I bought a bushel of Ida Reds and Galas weeks ago and left them in the garage until I had time to process them. Last year I only did one bushel, but once you get going it doesn't take much longer to do two. Monday morning I woke up and decided it was a good day. The kids got a day off school and were actually a big help. We soaked the apples in a sink full of water with a 1/4 cup vinegar to remove the pesticides. (not intestines as Tiana accidentally said) It worked well, the apples came out squeaky clean and chemical free! Jude helped me fill up the sink with apples and Caleb moved them to the next sink to rinse them.
Tiana helped me quarter the apples until the last one was sliced (no need to remove the core or peel)
We boiled them with a splash of water until they were mush, about 20 mins
and then cranked them through the wonderful Victorio strainer. I borrowed my Mom's strainer again this year, but I am always looking for one at garage sales. We let the sauce cool a bit and then scooped it into freezer bags
I only had a few containers handy, so most of it went into freezer bags. I much prefer scooping into a container, so I will start collecting for next year. Notice the one lonely apple on the table? It was forgotten. Now that the kids are more able to help, I might consider freezing or canning more foods.
